Title: Mixed Up Potatoes
Categories: Vegetable Side Dish
Yield: 6 Servings

6mdPotatoes; peeled, (up to 8)
1/4cButter or margarine
1cnCream of chicken soup
1cSour cream
1/3cOnions; chopped
2cCheddar cheese; grated

Boil the potatoes for 15 minutes. Drain and let cool slightly before grating into a bowl. While the potatoes are boiling, melt the butter in a 9x13 inch baking dish. Add the soup, sour cream, onion and 1 cup of grated cheese to the potatoes. Mix well then turn into the baking dish. Stir to mix the butter. Cover with the remaining cheese and bake 20-30 minutes at 350 degrees.

NOTES : Can be made into a main dish by adding 1 1/2 - 2 cups of cooked chicken. 1 pkg. cooked chopped broccoli and 1 extra can cream of chicken soup. I do not grate potatoes when making main dish, but just slice them. (Also if desired, before baking, mix 2 cups of crushed corn flakes and 2 tablespoons melted margarine and sprinkle over potatoes.)
